Anniversary Sweets

My coworker Jaz asked me to make sweets for his wife for their 3rd anniversary. He said I could make whatever I wanted! He had not yet tried my cookies, so I definitely wanted to include some cookies… and then I thought, what is more romantic than chocolate covered strawberries?! Together they would make a cute little love tray.

Here is the picture I used for color inspiration (since he had no idea what colors would be good)…

… and here are my colors. My pink came out a little more purple, but I still love how they looked together.

Here are the cookies. I stuck with hearts. Cuz they’re all lovey and stuff.

On a side note, I know 3 people (they happen to all be men) who don’t like chocolate covered strawberries. Why you might be wondering? Because they don’t like strawberries. WHAT? How is that even possible? They must be aliens or something.

Lemon Freezer Pie

This is my mother-in-law’s recipe. Thank you Wendy for letting me share!

I love lemon. Anything lemon. This dessert is simple and not too sweet. Just perfect for a hot summer day.

I usually get this just once a year – on my father-in-law’s birthday, because it’s his favorite! My mother-in-law makes it in a pie pan or divides it between 2 small pyrex dishes, but I decided to make it as individual servings. I have these cute little dishes from pampered chef that have their own sealing lids. Everyone gets their own serving and they are easy to transport and eat!

Lemon Freezer Pie adapted from Bon Appetite magazine (years ago)

Ingredients:

3/4 cup graham cracker crumbs

2 tbsp sugar

2 tbsp melted butter

3 eggs, separated

1/2 cup sugar

1/2 cup lemon juice

1 cup whipped cream (thawed if using the frozen stuff)

Directions:

1. If using fresh whipping cream, whip. Cover and place in the fridge until ready to use.

2. Mix together graham crack crumbs, sugar, and melted butter until crumbles start to stick together. Spread out on a baking sheet and bake at 350 for 3-5 minutes. (If making in a pie pan or other dish, press this into the bottom and up sides and then bake.) Let cool.

3. Beat egg whites until frothy. Gradually add sugar and beat until soft peaks form. Add yolks one at a time and beat until combined.

4. Fold in lemon juice and then whipped cream.

5. Divide evenly between single serving dishes. Top with graham crumbles. (Or pour into prepared crust.)

6. Freeze overnight before serving. (I made mine in the morning, it froze for about 8-9 hours, and it was perfect by after-dinner time.)

Wedding S’more Pop Favors

Today is National S’mores Day!

A friend of a good friend of mine is getting married today and I made her these S’more Pops as her wedding favors!

If you love s’mores, you have GOT to make these. They take no time at all to whip up a few, and I promise they taste sooo much better than you can even imagine they would. I’m pretty much addicted.

How to: (sorry no pics. It’s easy though I swear.)
1. Stand up the mallows on a flat surface.
2. Shove the sticks straight into the tops of the mallows without lifting the mallow from the flat surface. (The stick may be into the mallow crooked, but it should be straight up and therefore sturdier. If you hold the mallow while you shove the stick in, it will end up crooked like 46.5% of the time. Ugh.)
3. Melt chocolate chips or candy melts in the microwave. I did candy melts this time and it seemed easier/smoother. But either works fine and tastes great. By the way, I like to melt in a short drinking glass. It’s taller and less wide so the chocolate is deeper and easier for dipping.
4. Dip the sticked mallow and shake downward to get as much chocolate off as will drip off. Trust me, they’re messy if you skip this step.
5. Roll the chocolated mallow in graham cracker crumbs.
6. Set the mallow “stick up” on wax paper to set up.

Mini Krispy Cupcakes

So a couple days ago I stumbled across this recipe for small batch rice krispy treats.

GENIUS!!

All the guilt of making your unhealthy snack is gone because you can make just enough for one little dessert! I thought this would be the perfect way to experiment with different flavors without making a ton of it (just in case it turned out yucky… like that could even happen with rice krispies…)

The recipe suggests pressing them into a muffin/cupcake pan (which makes 2). I decided to do a mini muffin pan instead (which made about 12), because everyone knows that the smaller a dessert is, the cuter it is too!

I have to give credit where credit is due here… my husband came up with the idea of dipping the tops in chocolate to make them look like cupcakes! I was going to just press them flat and drizzle them. I guess he’s pretty smart at the chocolate stuff because they turned out great!

I made 2 different kinds!!

Peanut Butter Rice Krispies

Ingredients:

1 tbsp butter

1/4 cup smooth peanut butter

1 cup mini marshmallows

1 1/2 cups rice krispies

Directions:

1. Spray muffin pan with non-stick spray.

2. In a small pot, melt butter, mallows, and peanut butter until smooth.

3. Add the rice krispies straight to the pot and stir until completely coated in goop.

4. Remove pot from heat and carefully scoop krispies into the muffin pan cavaties. Make the tops rounded if you want it to look like a cupcake, or make them flat if you want them to look like little cups.

5. Wait. The hardest part, I know.

6. When they are set up (mine took an hour or 2), melt chocolate, white chocolate, or candy melts to dip or drizzle however you like.

1 cup mini marshmallows

1 1/2 cups rice krispies

Directions:

Grape Salad

Ever since the first time I tried this wonderful grape salad, I have been hooked. I got the recipe from my mom, who got it from a coworker/friend (hi Jeri!!).

Even if you aren’t the biggest fan of some of the ingredients, I urge you to try this wonderful recipe, you won’t be sorry!

Grape Salad

Ingredients:

lots of seedless grapes, both red and green (I know that’s not a measurement, but it’s not exact science here. I bought 3 bags.)

1 jar of marshmallow creme (7 oz)

1 brick cream cheese (I like to use the 1/3 less fat kind)

about a cup of chopped walnuts

about 6-8 oz shredded coconut

Directions:

1. Pick apart your grapes. Wash them well in a strainer, then spin dry in a salad spinner. (If you don’t have a salad spinner you might want to drain them extra long or pat them somewhat dry with paper towels.)

2. Blend together marshmallow creme and cream cheese. I used my Sheila because I am lazy. Mix coconut and walnuts in by hand.

3. Plop the goop on your grapes and stir stir stir. If they are really goopy, you might want to add more grapes. Add more walnuts or coconut to your taste.

Disney Treats

My husband and I just got back from a week long vacation. We spent 8 days in Southern California, and 3 of those days were at Disneyland and California Adventure!

My hubby and I also went to Universal Studios Hollywood and I spotted some cute treats there as well. (Are cute treats on the rise, or did I just never notice this kind of stuff before I immersed myself in it?)

Red Velvet Donuts {Guest Post}

I am very happy to introduce my first guest post! Mallory is my coworker’s daughter and she is away at school in Chicago. (Which is too bad because we are like baking soulmates!) Mallory agreed to do a little guest post for me, and what a perfect time because my hubby and I are on vacation!! Thanks again chica!

My name is Mallory and I am a college student with a very large sweet tooth. I’ve always loved baking and filling people’s bellies with delicious treats. Very recently have I started venturing outside of boxed cake and brownie mixes (though they are delicious). Now that I am out of the dorms and in an apartment, I am eager to use my kitchen as much as I can. I’ve actually had to cut back on the baking so I didn’t overload my roommates and myself too much, not that they ever complained! Anyway, a lot of what I bake comes from Pinterest and from this blog.

A few months ago, I had my very first red velvet cupcake at a wonderful place called Flacos Tacos. I recently found out that these are actually made by Au Bon Pain and distributed, but I still like to pretend that they are from Flacos because it gives me an excuse to go back weekly. 🙂 The cupcake was absolutely magical, and I have yet to find anything like it. Essentially, I’ve been obsessed with red velvet ever since and have been eager to find a recipe. I’ve realized that I have never baked red velvet anything. While searching for the perfect, but somewhat simple recipe to try, I came across a website called velveteenbaker.com through Pinterest. Since I hadn’t yet used this Babycakes Donut Maker my grandma bought me for Christmas, these cute little red velvet donuts definitely caught my eye.

Because I have absolutely no experience baking red velvet or donuts, I figured I would follow this recipe exactly before trying to make it my own.

Ingredients for Donut batter:

2 cups all purpose flour

3/4 cup granulated sugar

2 tbsp baking powder

1/2 tsp salt

3/4 cups buttermilk

1 tsp vanilla extract

1 tsp red food coloring

1 tbsp natural cocoa powder, not dutch-processed

2 eggs, lightly beaten

2 tbsp butter, melted

Preheat oven to 425°F. Spray donut pan with nonstick cooking spray. In large mixing bowl, sift together all purpose flour, sugar, baking powder and salt.

Make a paste with the cocoa and red food coloring. This part worried me. Mine was powdery rather than pasty and red, but don’t worry because when you add it with the rest of the mixture it will turn out the way it should. Here’s what my “paste” looked like:

Next, add buttermilk, eggs, vanilla extract, butter and red paste mixture and beat until just combined. The batter should be thicker than normal cake batter. This picture doesn’t help much considering that it’s red on red.

Fill each donut cup approximately 3/4 of the way full. Bake 5-8 minutes or until the top of the donuts spring back when touched. Mine baked in about 3-4 minutes, but if you’re baking in donut pans in the actual oven 5-8 will be necessary. This was actually the trickiest part and I made an absolute MESS. As you can see below, the holes in the donut maker are tiny, but I wanted to be precise as possible so that they turned out round and fluffy.

I thought that using a piping bag would do the trick, but the mixture was way too thick for it. I ended up with red batter all over my cabinets and my arms somehow. I don’t even know how that happened. But I also don’t have much experience with piping bags, so if you have the skill and are feeling gutsy go for it. 🙂 Anyway, I ended up just using a good old-fashioned silverware spoon and hoped for the best. The spoon worked better for me. In the picture below, the piping bag ones are on the left and the better-looking spoon ones are on the right.

Also, I baked the donuts before I even made the vanilla glaze. That way, I could glaze them all at once and didn’t have to worry about the mixture hardening and becoming chunky.

Ingredients for Vanilla glaze:

2 tbsp hot water

2 cups confectioner’ s sugar

1 tbsp milk (I substituted buttermilk since it was all I had)

½ tsp vanilla extract

In small bowl, stir together all ingredients until sugar is completely dissolved. Use immediately to glaze donuts. You can either toss them in or dip just the tops. If the glaze starts to harden you can add more hot water, though I didn’t need to.

I basically took the donuts by hand (some cooled, some not) and dipped them in the glaze. I let them dry for a minute or so and dipped them again to make the coating a little bit thicker. Here’s the final product. They were yummy and a lot better when fresh. Though I think that next time a cream cheese glaze would be amazing!

Homemade Kettle Corn

I crave kettle corn all the time.

It’s sweet, crunchy, salty… the perfect craving food to fill every need. And so easy to eat!

It’s not one of those things you can just go to the store to buy. At least not here in Northern California.

You can get it at fairs and baseball games and very few other places. You gotta get it when you can otherwise you may not see any for a while.

Two weeks ago my hubby and I were at a Giants game, and the ENTIRE time I was looking for a kettle corn vendor to come up the stairs and make my day. No one ever came! I was devastated.

I decided I better learn to make it myself or else I may never get it when I need it again.

This recipe is sooooo easy, you’re CRAZY if you are not already planning on making this.

Homemade Kettle Corn – recipe from SavorySweetLife.com

Ingredients:

1/4 cup vegetable oil

1/2 cup popcorn kernels (I used white popcorn)

1/3 cup sugar

salt

**you will need a large pot (4-5 qts) with a lid

1. Pour the oil into your large pot and turn the heat on high.

2. Measure your popcorn and sugar into a bowl and shake it a bit to mix it up.

3. Drop 4 popcorn kernels into your oil. (When they pop, your oil is hot enough.)

4. After the kernels pop, dump in the sugar and the rest of the kernels.

5. Quickly stir them into the oil with a spatula, then put the lid on top the pot.

6. Holding the pot on top of or slightly above the burner, start to shake the pot. Once the kernels really start popping, turn off the burner and continue to shake the pot.

7. When the kernels slow and there is barely any popping, remove the lid and dump the popcorn into a large bowl.

8. Sprinkle with salt, stir it up, and sprinkle some more salt. Test. Stir and sprinkle more salt if necessary.

THAT’S IT! The whole process took maybe 5 or 6 minutes.

We actually ate most of it right away. Then I felt bad because my brother was at work and didn’t get any yet. Plus I forgot to take pictures of all the steps.

“Better Than” S’mores

These little guys happened by chance.

I was making some cupcakes (you can see them here) and had some extra frosting. It is too good to waste, so I pulled out my grahams and piped blobs on them.

This frosting is sort of like a marshmallow but not.. It’s sticky and foamy and light, and after setting overnight it stiffens up just a bit. If marshmallows aren’t your thing because of the texture or because of the “animal” in the gelatin, then this frosting is your friend. It contains none of that.

Then I was too lazy to actually melt chocolate, so I just threw a handful of chips onto each one.

The grahams sort of staled overnight so they were soft and more like a cookie, less like a cracker. It worked out perfectly for these little morsels.

Best accident/chance dessert ever.

Chocolate Dipped

There is something too perfect about chocolate dipped strawberries.

These I did for my aunt’s Oscars party (a while back!). First time I did little tuxes. Turned out pretty cute!

I also (finally) got around to dipping my peeps in chocolate. The week before Easter was crazy for me so I didn’t get to it in time. Peeps are a Spring thing not an Easter thing though right? Let’s go with that.
